Fast and Cool Recipe
After a fun day of giving the gift of "pampering" to my customers, I look forward to a little pampering just for me. By me. And a healthy quick meal, well that is the perfect ending for the day, for me, and then my own personal Spa. This is the best recipe, ok, one of the best I have. I love it for its simplicity, how quick it is, and how versatile. You can add a candle,(scented lightly of course) a really nice dish to plate it on. Some big bread, and too really splurge, how about some real butter? Here goes. Set tht table nice, you are sitting there, and you are worth it. I know guys who have this with a nice steak. They love it. Too much for me, but maybe on a share date. EKB'S Best Broccolli 1 package very fresh brocolli flowerets, or full size packaged,, and not trimmed, your preference 1 1 lb pkg, of fresh mushrooms. 1 fresh lemon garlic olive oil butter pasta I use small spirals, green pepper if you like a lovely platter, your color choic You can buy washed veggies, I still cannot trust them to be clean enough, I always wash and clean again. If you buy the untrimmed broc, cut it as you like. Put a good size pot of water on to boil. If you did not buy sliced mushrooms, wash and pat dry, or put through a "spinner". Slice as desired. Put two pats of butter in a skillet, (non-stick is best) Add Garlic POWDER, not Garlic salt, and some pepper, I use lemon pepper, I like that taste. Add the zest of lemon, about a half tsp, and a teaspoon of juice. When water boils, put brocolli in to cook. When butter melts, add 2 tbs. of Olive Oil. Stir, keep fire from browning it, just nice and almost hot, saute' your mushrooms in this, stirring frequently. If you like you can saute green pepper strips with your mushrooms. I sometimes boil pepper strips with my broccolli. And if it is really cold out, I put either a beef or chicken bouillion cube in the water also. But a can of reduced, or no salt broth, even vegetable, will work as well, and enhances flavor. Your flavor imagination can go berserk. When your broccolli is almost done, fork goes thru easily, add your pasta to the same pot, I usually use a cup, maybe a little more. Let boil till just past al dente. Not limp, but not firm. Drain. Both your broc and pasta should be done now. Put back in pot. Add your mushrooms, and if you like at this point you can add a wine of your choice to the butter and olive oil, cook down, you could add parsley flakes, and what ever, other spice you like. Cook down just a little. Plate pasta and Broccolli. Pour your sauce over all. Your bread in the oven should be hot by now. A nice salad with some raddichio is good. I also enjoy mandarin oranges and pineapple, shredded white cheeses tossed with a lettuce of your choice. Something good and firm. I sometimes put cherry tomatoes on the platter, and one in your mouth, as you bite down with a bite of broc and pasta is heaven, as those flavors blend, hot with the cold sweetness of the tomatoe. Yummy. If you have room, chocolate-cherry amaretto ice cream with chocolate chips and cherry bits in a wine glass is very good. You can sit down, sink back, contented and very happy. When relaxed from dinner, a toxin removing SPA bath tops it off. A great facial, some scented toner, then off to a real slumber land you go. Pampered, and feeling good. You were good to you..Enjoy.
